Rinse the eggplant fries under cold water and pat them dry with paper towels.
Set up a breading station: In one bowl, whisk the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
