Icebox Cake
This classic Icebox Cake is a simple no-bake dessert made with layers of homemade whipped cream and chocolate wafers. As it chills, the cookies soften into tender cake-like layers, creating a creamy, elegant dessert that is perfect for summer gatherings, holidays, and make-ahead entertaining.

In a large mixing bowl, beat the heavy whipping cream until soft peaks form.
Add the confectioners’ sugar and vanilla extract, then continue beating until stiff peaks form.
Spread a heaping teaspoon of whipped cream onto each chocolate wafer.
Stack the cookies together with whipped cream between each layer, creating six cookie stacks.
Turn the stacks onto their sides and arrange them end-to-end on a serving platter to form a long cake shape.
Use the remaining whipped cream to frost the top and sides of the cake completely.
Garnish with chocolate curls if desired.
Refrigerate the cake for 4 to 6 hours, or overnight for best results.
Slice diagonally across the cookie layers and serve chilled.
