Preheat the oven to 400 F (200 C).
Line a large baking sheet with parchment paper or aluminum foil, and spray with non-stick cooking spray.
Rinse the cod fillets under cold water, pat them dry with paper towels, and season with salt and pepper.
In a small bowl, mix together the olive oil, lemon juice, parsley, thyme, garlic powder, and salt.
Place the cod fillets on the prepared baking sheet, leaving about 1 inch of space between each fillet.
Brush the top of each cod fillet with the olive oil mixture, making sure to coat it evenly.
Sprinkle the panko breadcrumbs and Parmesan cheese over the top of each cod fillet.
Bake the cod in the preheated oven for 12-15 minutes, or until it reaches an internal temperature of 145 F (63 C).
Check the cod with an instant-read thermometer in the thickest part to ensure it's cooked to perfection.
Remove the cod from the oven and let it rest for 2-3 minutes before serving.
Garnish with chopped fresh dill and serve immediately.
