Sauté Onions and Garlic: In a large pot, heat the butter over medium heat. Add the chopped onions and sauté until they become soft and translucent, about 5-6 minutes. Toss in the garlic and cook for another 30 seconds, just until fragrant.
Cook the Mushrooms: Add the sliced mushrooms to the pot and stir to coat them in the butter and onion mixture. Let them cook for about 10 minutes, stirring occasionally. You want them to release their moisture and become nicely browned.
Thicken the Soup: Sprinkle the flour over the cooked mushrooms and onions. Stir constantly to cook the flour for 1-2 minutes, ensuring it doesn’t burn but gives the soup a chance to thicken.
Add Broth: Gradually pour in the broth while stirring to prevent lumps. Bring the mixture to a simmer, and let it cook for another 10-15 minutes. The soup will start to thicken as it simmers.
Blend the Soup: Once the soup has thickened to your liking, use an immersion blender directly in the pot to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender if you don’t have an immersion blender. Be careful of hot splashes!
