In a bowl, combine ground pork, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix until the mixture is evenly seasoned and slightly sticky.
Lay a gyoza wrapper flat. Place a small spoonful of filling in the center.
Moisten the edges of the wrapper with water. Fold the wrapper in half over the filling and pinch to seal.
Heat a tablespoon of oil in a pan over medium heat. Arrange the gyoza in a single layer with space between them.
Fry for 2–3 minutes until the bottoms are golden brown and crisp.
Add a splash of water, cover the pan with a lid to steam for 5 minutes.
Remove the lid and cook uncovered for another 2 minutes to re-crisp the bottoms.
Serve hot with soy sauce or your favorite dipping sauce.
