Spinach Quiche

A golden puff pastry quiche filled with bacon, spinach, onion, garlic, cream and cheese, topped with pine nuts and baked until set. Can be served warm or cold with a side salad.

Preheat the oven to 180°C. Remove puff pastry from freezer and allow to thaw. Once soft, place into a 25cm quiche pan, covering the base and sides. Trim edges and poke holes with a fork. Set aside.
Thaw spinach on paper towel, squeeze out excess water, and set aside.
Heat olive oil in a skillet over medium-high heat. Add bacon and fry until crispy. Remove and set aside. Reduce heat to medium, add onion and garlic, and sauté for 2-3 minutes until lightly browned.
Add bacon back to the pan with spinach. Stir to combine, then remove from heat.
In a bowl, whisk eggs, cream, and nutmeg together.
Spoon bacon and spinach mixture onto pastry base. Pour over the egg mixture. Sprinkle with shredded cheese, garnish with optional spinach leaves, and top with pine nuts.
Bake for 35–40 minutes until golden brown. Remove and allow to cool for 20–30 minutes before slicing.
Slice and season with freshly ground salt and pepper. Serve warm or cold with a side salad.
