Start by washing the eggplant thoroughly. Slice it into long, thin sticks, about the size of traditional French fries. Pat them dry with a paper towel to remove excess moisture, which helps them crisp up better in the air fryer.
In a mixing bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper. Mix until everything is evenly distributed, creating a flavorful coating ready for the eggplant.
Lightly brush the eggplant sticks with olive oil. This step helps the coating stick and ensures a golden, crispy texture once air-fried. You can also toss them gently in a small bowl with the oil if you prefer.
Dip each eggplant stick into the breadcrumb mixture, pressing lightly to ensure the crumbs adhere to all sides. Place the coated fries on a plate or tray while you finish with the rest.
Preheat your air fryer to 400°F (200°C). Arrange the fries in a single layer in the basket, avoiding overcrowding. Cook for 12–15 minutes, flipping halfway through, until the fries are golden brown and crispy.
