This guilt-free flatbread uses just cottage cheese and eggs to create a high-protein, low-carb alternative to traditional bread. Soft inside, slightly crisp on the edges, and surprisingly satisfying — perfect for wraps, sandwiches, or breakfast toast.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Add cottage cheese and eggs to a blender or food processor. Blend until completely smooth.
If using almond flour or seasonings, stir them into the batter by hand.
Pour the batter onto the prepared sheet and spread it into a thin rectangle or circle using a spatula.
Bake for 22–25 minutes, until edges brown slightly and the center is set (not jiggly).
Let cool fully before lifting off the parchment. It firms up as it rests.
