Choose fresh, firm potatoes. Scrub them thoroughly under cold water to remove dirt. Peel if desired, then cut into 1/4-inch thick sticks.
Place the cut potatoes in a large bowl and cover completely with cold water. Let them soak for at least 20 minutes. After soaking, drain thoroughly and pat completely dry.
In a large bowl, toss the dried potato sticks with olive oil until evenly coated. Sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss again to ensure even distribution.
Preheat your air fryer to 380°F (193°C) for 3-5 minutes. Arrange the seasoned potato sticks in the air fryer basket in a single layer with small spaces between pieces.
Cook the fries for 12 minutes, then pause to shake the basket or use tongs to flip the fries. Continue cooking for another 8-10 minutes until golden brown and crispy.
